whole wheat banana bread recipe

Everyone likes banana bread. Even people who don’t like anything; even they like banana bread. This is because banana bread isn’t really bread. It’s a giant delicious muffiny thing in the shape of bread. And you can spread butter on it when it’s warm but probably not mustard or mayonnaise. It is not sandwich bread.

But you know that. Why am I stating the painfully obvious?

This banana bread recipe is all mine own and it comes highly recommended. Not by me so much as by my daughter, although I too recommend it. It’s just that she would eat an entire loaf in one day, if I let her. Heaven forbid anyone get between her and the banana bread. We refer to those people in the past tense because they never survive.

Naturally, this banana bread uses whole wheat flour, organic if you can find it.

Suggestion: add chocolate chips or (better!) 70% cocoa dark chocolate chunks! Because adding chocolate to anything is just good thinking. Unless you don’t like chocolate. In which case, why not? And also, you don’t have to add any.

ingredients
¼ c butter or margarine
½ c sugar

½ c applesauce
2 eggs
3 super ripe bananas, mashed

1¾ c whole wheat flour
1 tsp baking soda
½ tsp baking powder
½ tsp salt

what to do
Preheat oven to 350°F.

Cream butter and sugar in a mixer (or by hand).

Mix in eggs and applesauce.

Add all dry ingredients and stir until combined.

Pour into greased loaf pan and bake at 350°C 45-60 minutes – or until an inserted toothpick or a knife comes out clean. Allow to cool slightly before removing from pan.

cut, butter, consume!
