weekend cookie recipe | butterscotch cookies

I love to make cookies for my kids for Friday after school snack. It gets the weekend off to a happy start and there are usually enough cookies left to last us through the middle of the following week.

These Butterscotch Cookies are easy and delicious. As always, I use whole wheat flour instead of regular white flour as it is far healthier and makes no noticeable difference to the taste of the cookie. I also recommend using whatever organic ingredients you can find and afford. I realize that some organic products are outrageously priced, but the more we use them the lower the prices will become over time.

Please note that the dough for this recipe needs to chill in the fridge over night so if you want them tomorrow, get started today! The great thing about this recipe is that there is enough dough to form two rolls, one for right away and one to freeze for a quick batch of cookies another day. Easy made even easier equals awesome!

Best Butterscotch Cookies Recipe
Ingredients
1 c butter or margarine, softened
2 c brown sugar, packed
2 eggs
1 tsp vanilla

1 c walnuts or vanilla chips, of toffee bits or whatever!

3 c whole wheat flour
1 tsp baking powder

Directions
Cream butter and sugar together with a mixer. Beat in eggs one at a time. Add vanilla and nuts or chips or whatever.

Combine dry ingredients and add to wet mixture. Shape into two rolls of approximately 1.5-2 inches in diameter. Wrap in parchment, wax paper or plastic wrap and chill over night (or freeze). To bake slice as many cookies as you’d like and arrange on an ungreased cookie sheet. Bake at 350°F for 8 minutes (or slightly longer if you prefer a crisper cookie).

Below is a photo of my latest batch of Butterscotch Cookies just before they went in the oven. I use parchment paper because I find my oven is so hot that the bottom of the cookies brown more than I want them to without parchment. You do not have to use parchment paper with this recipe.

On this occasion I used vanilla chips but I’ve also made these using peanuts, walnuts, macadamia nuts, chocolate chips, toffee bits and yogurt chips.

    There’s something so comforting to me about rolled/wrapped/refridgerator cookies! Like, instant cookies just waiting for you in the fridge when you need them….
