pretty summer cupcakes
For her birthday with my husband’s side of the family this year, my little girl decided on cupcakes rather than cake. She’s not much of a chocolate fan so we went with a new white cake recipe. I am no great judge of white cake – come see me about chocolate any time! – but everyone at the party said these were wonderful.
These pretty party cakes can be used for any summer occasion – BBQs, birthdays, baby or wedding showers – the possibilities are endless. Any beautiful summer day will be brighter still with the addition of these delicate morsels.
Here are the recipes for White Cake cupcakes and Absolutely Dreamy Frosting.
White Cake ~
what you’ll need
1 cup white sugar
1/2 cup butter
2 eggs
2 teaspoons vanilla extract
1 1/2 cups all-purpose flour
1 3/4 teaspoons baking powder
1/2 cup milk
what to do
Preheat your oven to 350°F and line your muffin tin with cupcake papers.
In a medium bowl, cream together the sugar and butter. Beat in the eggs, one at a time, then stir in the vanilla.
Combine flour and baking powder and add to the creamed mixture. Stir in the milk until batter is smooth. Pour or spoon batter into prepared cupcake pan.
Bake for 20-25 minutes or until the cupcakes spring back to the touch. Allow to cool completely before frosting.
Absolutely Dreamy Vanilla Frosting ~
what you’ll need
This recipe can be easily transformed into a chocolate frosting with the addition of 6 tablespoons unsweetened cocoa powder.
2 3/4 – 3 cups icing sugar
6 tablespoons butter
5 tablespoons evaporated milk*
1 teaspoon vanilla extract
food coloring in color of your choice
silver candy balls or other decoration
* Use a bit of regular milk if you do not have evaporated milk on hand but be careful to add a little at a time so that you do not adversely affect consistency. But if at all possible do use evaporated milk – it’s what makes this frosting absolutely dreamy.
what to do
I use my KitchenAid mixer for making frosting. A mixer of some sort is recommended.
Sift dry ingredients into a bowl and set aside.
Cream butter in mixer and then gradually add milk and sugar, alternating each until all are incorporated. Ad vanilla. Beat until light and beautifully fluffy! Add more sugar or milk if you need to adjust consistency to suit your needs or taste.
Add food coloring, if you like – but keep some white or different colored icing for the flowers. Ice cupcakes with one color and use a flower tipped icing bag to create small flowers on the top. Decorate the center of each flower with small silver balls. and, ta-da!
