mexican night
It’s summer time and the livin’ is awesome! The time for heavy winter cooking has passed and we’ve moved on to lighter summer choices. It’s hard not to think of Mexican cooking when the weather becomes hot and sunny. We at casa little light are big fans of Mexican Night for dinner many times over the summer months! Enjoy our recipes for Mexican Salsa, Guacamole and Mojitos!
Salsa Recipe
This salsa is akin to the variety served at resorts in the Mayan Riviera. It is a simple combination of only a few fresh ingredients of crisp summery flavors.
you’ll need:
2 large ripe tomatoes
1/4 white onion chopped
cilantro, chopped
dash lime juice
dash salt (optional)
what to do
Cut tomatoes in half and spoon out the seeds. You want to get rid of all the mushy gushy parts of the tomato. Chop the tomatoes into small chunks. Add chopped onion and cilantro. The amount of cilantro will depend on your taste.
Add a dash of lime juice – not too much!
Add a dash of salt, if you prefer.
Stir. Open bag of tortilla chips. Eat!
Guacamole Recipe:
you’ll need
2 ripe avocados
1/4 white onion finely chopped
1-2 tsp lime juice (fresh or bottled)
chopped jalapenos (and some juice from the jar)
dash salt
optional ingredients
diced tomato
cilantro
what to do
Spoon avocado innards into a medium sized bowl. Mush to desired consistency. Some people like their guacamole pretty chunky while others prefer a creamier concoction.
At this point it’s a good idea to add your lime juice. The idea here is to keep the avocado from turning brown. Avocados are like apples that way – as soon as the air hits them they can turn brown. The lime juice helps delay that while also adding excellent flavor.
Now add chopped onion and as much chopped jalapeno as you like. A spoonful or two of the brine from the jalapeno jar adds great flavor as well but be careful to not add to much or the guacamole will go soupy.
If using tomato and cilantro, this would be the time to add them!
Sprinkle with a dash of salt and stir everything until well mixed.
That’s it. Time to eat!
Mojito Recipe
you’ll need
Ice (we prefer crushed but cubes are fine)
Rum (your favorite kind – dark, gold, light – it’s a matter of preference but we use dark)
Fresh mint (has to be fresh, must be fresh. absolutely cannot be anything but fresh)
Limeade or Bacardi frozen Mojito mix (we use the limeade)
Tonic water*
what to do
Chop your mint leaves a little and put them in the glass. Use something to mush the leaves in the bottom of the glass. We have a Bacardi Musher. It’s green and pretty.
Fill a tall glass about a third of the way with ice.
Add a healthy shot of Rum.
Add limeade or mojito mix and then top with some tonic water. Amounts here will depends on what balance of flavors you like.
*Most recipes for mojitos seem to call for club soda. We tried this but didn’t like it. Tonic water better mimics the awesome mojitos we had in Mexico so that’s what we use.
