crazy easy super delish mexicali pizza recipe

I am all about the healthy* but I’m also happy when doing so is easy. Let’s be honest, we can’t spend 9 hours cooking every time we eat. I get that. This recipe is great for a quick and healthy lunch or to put out when entertaining.

*except for when I am all about the chips and dip but let’s call that a different kind of healthy

ingredients
whole wheat tortillas (1 for each pizza you want to make)
monterey jack cheese
tomatoes
black olives
green onions
jalapenos!

do this
Preheat oven to 400°F.

Grate the cheese, chop the veg.

Put desired amount of cheese onto tortilla. Tons of cheese will make it hard to get the tortilla crispy so don’t go toooo heavy on the cheese.

Toss on the veg.

This pizza goes directly onto the oven rack so try not to put any cheese or veg too close to the edge of the tortilla as it might slip off while cooking.

Place directly onto oven rack and bake for about 4 minutes. Keep an eye on them while baking and take out as soon as edges are turning brown. Use tongs to slide each pizza onto a plate or cutting board.

If you’re feeling adventurous, you can now add a few dashes of hot sauce to kick it up a little.
