cranberry and white chocolate scones
Scones are an awesome alternative to cookies for a weekend or anytime snack. They are super easy to make and travel well. Make them for a Sunday afternoon nibble and pack the rest with lunches during the week. They are a perfect compliment to morning coffee or tea.

Ingredients
1 3/4 whole wheat cups flour
1/4 cup sugar
2 1/2 teaspoons baking powder
1/2 teaspoon salt
5 tablespoons chilled unsalted butter in chunks
8 tablespoons skim milk*
1 large egg, beaten
1/2 cup fresh or frozen or dried cranberries
1/2 cup white chocolate chips
*You can substitute the milk with half and half for a richer version. We would only do this occasionally, though, as we try to limit fat content in our every day foods! For guests, mind you, we would definitely use half and half because everyone knows you can’t gain weight from food you make for guests – that’s an actual scientific fact
Directions
Preheat oven to 400°F.
Combine all dry ingredients in a medium size bowl. Add chunks of butter and ‘cut in’ with a Pastry Knife or with two butter knives until the mixture resembles course crumbs.
Add remaining ingredients and stir until almost entirely combined. Turn dough out onto lightly flour surface and finish combining the dough by hand. Pat out into a rectangle or circle 1/2 inch thick.
Cut dough with a round biscuit cutter or with a knife into squares, triangles or wedges (if you have patted the dough out round, as I did with this batch).

Bake on greased or parchment covered baking sheet for about 10 minutes – remove when bottoms are a light golden brown. Transfer scones to cooling rack to cool.

Enjoy with tea or coffee (or a glass of milk for the wee ones in the crowd)!

Wow, those look good. I’ve never made scones, in fact I’ve never even eaten one! I think I will try these.
I hate cranberries but I love white chocolate. Can I leave the cranberries out?
Sure. You can use macadamia nuts instead, if you like, or just go with all white chocolate.
