blue caesar

This recipe is for a caesar salad dressing which uses both blue cheese and parmesan. I know a lot of people are fearful of blue cheese but honestly, this is an amazing caesar dressing you won’t regret trying. In fact, you’re not likely to give it up once you do. I find myself craving this dressing the way some people crave junk food. It’s that good.

This recipe is suitable for vegetarians who do not eat fish or eggs – this recipe does not contain anchovies or egg. It does, however, contain dairy in the form of cheese.

what you’ll need
1/3 c extra virgin olive oil
2+ cloves of garlic (put as many as you like – what do I care, I can’t smell your breath)
1/4 c crumbled blue cheese (we use far more than that, mind you)
1/2 c grated fresh parmesan cheese
1/4 c lemon juice (right from the bottle is fine)
1 tsp mustard
salt
pepper

what to do
Combine peeled garlic and olive oil in a blender or food processor. Whaz until garlic is finely chopped.

Add blue cheese – blend.

Add parmesan (I hope you’re using fresh!) and lemon juice – blend.

Add mustard, salt and pepper – blend.

Combine with romaine lettuce leaves chopped into lovely bite-sized pieces. Add croutons, if you like, and sprinkle with additional parmesan cheese.

Eat, eat more, crave more, make again another day.
